Not in the mood for a big project in the kitchen tonight but still want something tasty? This super easy Grilled Trout recipe solves that problem. The nice thing is that you can substitute the trout for most any fish & still get great results.
- Ingredients:
- 4 medium pieces of Trout; or your favorite fish
- 1/2 cup mayonnaise; we prefer Kraft with olive oil
- 1/4 cup Italian flat-leaf parsley; finely chopped
- 1/2 tsp onion powder
- 1 large lemon; juiced & zest to 1 Tbsp
- 1 tsp anchovy paste
- 2 Tbsp extra-virgin olive oil
- sea & fresh ground black pepper; pinch of each
- Directions:
- Preheat grill.
- In a medium bowl combine mayonnaise, parsley, onion powder, lemon juice, zest & anchovy paste, whisk to a smooth consistency.
- Place bowl in refrigerator & allow to cool.
- Meanwhile sprinkle fish with salt & pepper, brush with olive oil.
- Place fish on a preheated grill & cook for 3-5 minutes on each side or until flaky.
- Serve with a dollop of herb dressing and lemon wedges.
