- Ingredients:
- 4 large boneless pork chops; bone in is also an option
- 2 eggs; 1 yolk, 2 whites
- 1 Tbsp Mrs. Dash Seasoning; any flavor
- 1 cup breadcrumbs Panko; or Italian style
- 1 Tbsp dried basil
- 1 Tbsp garlic powder
- 1 Tbsp extra virgin olive oil
- 1/2 medium onion; sliced thin & sauteed
- 1 can stewed tomatoes
- 1/2 of each red & yellow bell pepper; sliced thin (optional)
- Directions:
- Combine all dry ingredients in shallow dish for your breading, mix well.
- Crack & whisk eggs in a separate dish to make your wash, using only 1 yolk.
- Dip pork in egg wash then transfer to breading dish and evenly coat each chop.
- Once coated place all chops on a plate, cover & place in refrigerator for 10-15 minutes. This will help the chops not to stick to your frying pan.
- Add 1 Tbsp of olive oil to a large frying pan & place on medium heat.
- Place each chop in pan & brown lightly for 2-3 minutes each side.
- Place chops in an oven proof dish & bake inside 350 degree pre-heated oven for 20-30 minutes depending on thickness.
- While chops are cooking, saute onions, tomatoes & peppers (if using them) in a large saute pan with one Tbsp of olive oil, serve over pork chops.
