Our trip to Denver included a stop at Toast Fine Food & Coffee restaurant in downtown Littleton for a delicious breakfast. This Mediterranean omelette was a big hit.
- Ingredients:
- 4 egg whites
- 1/4 cup fresh spinach
- black olives; approximately 1/4 cup
- 1 Tbsp pimento
- 2 slices sharp cheddar cheese
- sea salt & fresh ground black pepper; to taste
- 1 tsp butter; we prefer unsalted
- Directions:
- Heat butter & or olive oil in a medium skillet over medium heat.
- Add spinach, olives & pimento, saute until spinach starts to slightly wilt.
- Pour egg whites in pan & allow to cook for 3-5 minutes.
- Flip omelette over, add cheese & cook for another 3-5 minutes.
- Fold & serve with your favorite sides.
- We enjoyed a side of red potatoes & an English muffin.
- OTG Tip: transferring omelette to an oven safe dish or pie pan and heating under the broiler for a few minutes makes for very soft cheese.
