Does it get any better than a good hearty omelette for breakfast? This ham & cream cheese omelette is definitely a favorite!
- Ingredients:
- 1/2 cup bell pepper, chopped; we prefer red bell peppers
- 2 tsp extra-virgin olive oil
- 3 large brown eggs, whisked; using only 1 yolk
- 1/4 cup Canadian bacon, diced
- pinch of sea salt
- dash of fresh ground black pepper
- pinch of paprika
- 3 Tbsp cream cheese, cut into small cubes; lite cream cheese is also an option
- 1/4 cup baby bella mushrooms, sliced & saute'd; optional
- Directions:
- Lightly coat skillet with small pad of butter or non-stick cooking spray.
- Add olive oil & bell pepper, cook until tender.
- Reduce heat to medium and add eggs.
- As eggs set, lift edges allowing uncooked portion to flow underneath.
- Once eggs are set, add ham, salt, pepper, paprika & mushrooms (if using them) to one side of the omelette.
- Top with cream cheese cubes, fold omelette over filling, cover & allow to cook for 2-3 minutes until cheese to softened.
- Serve hot and Enjoy!!
