Sunday's usually seem to allow us the most time to make our bigger meals. That's why we look forward to breakfast meals like this Grilled Chicken Hash recipe.
- Ingredients:
- 1/4 cup unsalted butter
- 1 clove garlic; minced
- 1 small onion; finely chopped
- 1 red bell pepper; finely chopped
- 1/4 yellow pepper; finely chopped
- 1/2 tsp sea salt
- 1/4 tsp white pepper
- 2 tsp Worcestershire sauce
- 1/2 lb Yukon gold potatoes; diced into 1/4 pieces; cooked until soft
- 4 boneless skinless chicken breasts; grilled & finely chopped
- 2 tsp fresh basil; finely chopped
- 4 large brown eggs-poached; be sure to poach beforehand
- Directions:
- Melt butter in a large skillet over medium high heat and add garlic; saute' for 2-3 minutes until soft.
- Add onions & bell peppers and saute' until they also begin to softened.
- Mix in salt pepper and Worcestershire sauce and cook for 2 minutes.
- Lightly stir in cooked diced potatoes.
- Add chicken & 1 tsp of chopped basil; reserving remaining basil for garnish.
- In a separate skillet heat 1 Tbsp butter and add in 1 cup of hash; cook until golden brown; approx. 5 minutes.
- Place hash on serving plate. Top with poached egg & garnish with basil.
- Repeat process for remaining hash & eggs.
