Looking to eat light tonight? Try this wonderful salad with either a sweet balsamic dressing or one of your own favorites.
- Ingredients:
- 4 large boneless skinless chicken breasts
- 8 cups mesclun greens; washed & cut
- 1/2 cup feta cheese; crumbled
- 2 large apples, cubed; we prefer Fuji or Gala
- 1/4 cup candied pecans; finely chopped
- Directions:
- Place chicken on a preheated grill & cook all the way through, flipping only one time.
- Once chicken is fully cooked, slice into bite size pieces.
- In a large mixing bowl combine grilled chicken, mesclun greens, feta cheese & cubed apple pieces.
- Drizzle your favorite dressing over all ingredients and toss until well coated.
- Transfer to serving plates & top with chopped candied pecans.
