Relax & enjoy this wonderful Cool Melon Soup with a delicious salad or sandwich.
- Ingredients:
- 4 cups seedless watermelon; cut into 1 chunks
- 4 cups ripe cantaloupe; honey dew melon is also an option
- 2 small jalapeno peppers; seeded & finely chopped
- 1/2 cup fresh blueberries
- 1 Tbsp clover honey or agave nectar; warmed for 15 seconds
- 1 medium lemon; juiced
- sea salt & black pepper; pinch of each
- Directions:
- Place watermelon & cantaloupe in food processor or blender, puree.
- Transfer to a large mixing bowl, stir in lemon juice, honey, salt, pepper & jalapeno.
- Cover & chill in refrigerator for approx. 1 hour before serving. We enjoy adding fresh fruit as well; pineapple, kiwi, orange slices etc...
- This is a recipe that can be made the night before.
- Top & serve with fresh blueberries.
