The next time you find yourself needing a last minute recipe for that dinner party, try this Mixed Green Bean Salad. It's quick, healthy & very tasty!
- Ingredients:
- 1 bag mixed salad greens
- 1 can canellini beans, drained; northern beans are also an option
- 1 can garbanzo beans; rinsed & drained
- 2 Tbsp capers; rinsed & drained
- 1 lemon; juiced & zest
- 1 Tbsp pure grade A maple syrup
- 3 Tbsp extra-virgin olive oil
- sea salt & black pepper; pinch of each
- 2 cloves garlic; finely minced
- 1/4 tsp cane sugar; optional
- Directions:
- Place ingredients 4-9 and sugar if using it in medium bowl, whisk.
- In a separate bowl combine mixed salad greens & beans.
- Pour dressing over salad & beans, toss well & serve.
