My favorite part of cooking is being able to take ordinary food & give it extraordinary flavor with a few simple ingredients. This Orange Vinaigrette Dressing does just that. It also makes for a great marinade.
- Ingredients:
- 2 large navel oranges, juiced to 1/2 cup; not from concentrate o.j. is also an option
- orange zest; 1 Tbsp
- 1 Tbsp rice vinegar
- 1 tsp light brown sugar
- 1/2 cup canola oil
- 1 Tbsp orange marmalade preserves
- 1 tsp extra-virgin olive oil
- 1/4 tsp white pepper
- sea salt & ground black pepper; pinch of each
- Directions:
- Using a medium size mixing bowl whisk orange juice, orange zest, brown sugar & vinegar together.
- Add in both oils & continue whisking.
- Add salt, pepper & marmalade, whisk again until all ingredients are until well blended.
- Transfer to a mason jar, cover & refrigerate until ready to use.
- Shake well before using.
- Remember that this can be used for a salad dressing as well as a marinade for chicken breasts.
