These hot healthy burritos are great for lunch or dinner anytime you're on the go!
- Ingredients:
- 1 cup Uncle Ben's rice; any flavor
- 1 cup pinto beans
- soft tortillas
- 1/2 cup Mexican blend cheese; reduced-fat or regular
- 1 cup lettuce; chopped
- 1 large tomato; diced
- 1/2 cup black olives & onions; optional
- sour cream; a dollop
- salsa; favorite store brand
- Directions:
- Cook rice & beans according to package directions then combine together in one skillet.
- Warm tortillas in a separate skillet.
- Fill each tortilla with beans, rice, lettuce, olives, salsa & sour cream.
