Having grown up with an Italian grandmother, pasta is something that I definitely enjoy. This Chicken & Sun-Dried Tomato Pasta recipe satisfies even the biggest pasta cravings.
- Ingredients:
- 1 pkg chicken tenders; cut into 1/2 pieces
- 1 pkg penne pasta
- 1/2 cup sun-dried tomatoes; sliced thin
- 2 Tbsp sun-dried tomato pesto
- 4 cloves garlic; finely minced
- 1/2 cup chicken stock; reduced sodium preferred
- 2 Tbsp fresh basi;l finely chopped
- 1 Tbs dry oregano
- 1/4 cup extra-virgin olive oil
- sea salt & fresh ground black pepper; pinch of each
- 1/4 cup parmigiano Reggiano cheese; parmesan cheese is also an option
- Directions:
- Cook pasta according to package instructions, rinse, drain & set aside in large bowl.
- In a separate saute pan add olive oil & garlic, set on medium heat burner, stir until garlic is lightly browned.
- Place chicken tenders in pan, add chicken stock, sun-dried tomatoes & pesto, continue to stir well.
- Cook until chicken is no longer pink.
- Add oregano, basil salt & pepper.
- Cook & stir for another 2-3 minutes.
- Transfer all ingredients in large bowl with chicken, sprinkle with cheese & mix well.
- Serve in individual pasta bowls & enjoy!
