Quick & Easy White Chocolate Rice Pudding

This quick & easy rice pudding taste like it took hours to make, when in reality it's ready to eat in less than 10 minutes.

  • Ingredients:
    1. 3 1/2 cups coconut milk-divided; we prefer Silk plain or vanilla flavored
    2. 1/3 cup raisins; regular or golden
    3. 2 tbs light brown sugar
    4. 1/4 tsp ground cinnamon
    5. 1 Tbsp unsalted butter
    6. pinch of sea salt
    7. 1 cup instant rice
    8. 1 package of instant white chocolate pudding; 1 ounce size
  • Directions:
    1. In a large saucepan combine and stir in 1 1/2 cups milk, raisins, brown sugar, cinnamon, butter & salt.
    2. Bring to a boil over medium heat and stir occasionally.
    3. Stir in rice, cover and reduce to low heat.
    4. Allow to simmer for 10 minutes while stirring occasionally.
    5. Prepare pudding according to package instructions using remaining coconut milk.
    6. Once prepared stir pudding into rice mixture and serve warm.
