This quick & easy rice pudding taste like it took hours to make, when in reality it's ready to eat in less than 10 minutes.
- Ingredients:
- 3 1/2 cups coconut milk-divided; we prefer Silk plain or vanilla flavored
- 1/3 cup raisins; regular or golden
- 2 tbs light brown sugar
- 1/4 tsp ground cinnamon
- 1 Tbsp unsalted butter
- pinch of sea salt
- 1 cup instant rice
- 1 package of instant white chocolate pudding; 1 ounce size
- Directions:
- In a large saucepan combine and stir in 1 1/2 cups milk, raisins, brown sugar, cinnamon, butter & salt.
- Bring to a boil over medium heat and stir occasionally.
- Stir in rice, cover and reduce to low heat.
- Allow to simmer for 10 minutes while stirring occasionally.
- Prepare pudding according to package instructions using remaining coconut milk.
- Once prepared stir pudding into rice mixture and serve warm.
