- Ingredients:
- 2 cups finely grated carrots, using #1 cone on your Kitchen Kutter
- 1/2 cup crushed pineapple, well drained
- 1 cup unbleached white flour
- 1 1/2 cups whole-wheat flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp ground cloves
- 1/2 tsp ground allspice
- 1/2 cup golden raisins
- 1 cup walnuts, chopped
- 2 fresh squeezed oranges
- 1 cup pure clover honey, heated in microwave for 60 seconds
- 2 tsp pure vanilla extract
- 1/4 cup canola oil
- Directions:
Spray your large skillet with cooking spray, brush olive oil along the bottom & sides, set on low heat. Use the #1 cone on your Kitchen Kutter to grate the carrots. In a large mixing bowl add grated carrots, orange juice, vanilla, honey, raisins, pineapple & canola oil. Stir together until well mixed. In a separate medium mixing bowl, combine both of the flours along with baking soda, spices & walnuts, mix well. Combine dry ingredients into carrot mixture and stir until well blended. Pour mixture into skillet & spread evenly. Bake for approximately 25-30 minutes on low heat until toothpick comes out clean. Allow cake to cool before removing & serving.
