This delicious Lemon Cake Pudding is a great choice for a that sweet tooth craving.
- Ingredients:
- 1 9oz package of yellow cake pudding
- 1/2 cup coconut milk; we prefer Silk plain or vanilla
- 1/4 cup sour cream; regular or light
- 1 lemon; juiced & zest
- 2 cups mixed berries; fresh or frozen
- whipped topping
- Directions:
- Start by preheating your oven to 350 degrees.
- In a large mixing bowl combine cake mix, milk & sour cream and lightly stir.
- Add & stir in 1 tsp of lemon zest & 2 Tbsp of lemon juice to cake mix until all ingredients are well blended.
- Lightly coat an 8 ceramic or glass baking dish with non-stick cooking spray and add the batter.
- Pour 2/3 cups of boiling water over mixture and place in oven allowing to bake for 28 minutes.
- Remove from oven and allow to stand for 10 minutes before serving with berries & whipped topping.
