These delicious quick & easy berry pancakes are packed with a punch of wonderful flavor.
- Ingredients:
- White & whole wheat flour; 1 cup of each
- 3 Tbsp pure cane sugar; can also substitute
- 1 tsp sea or Kosher salt
- 2 cups vanilla coconut milk; we prefer Soy brand
- 3 Tbsp canola oil
- 1/2 cup each fresh blackberries & raspberries
- Directions:
- Combine all dry ingredients in a medium mixing bowl, sift.
- Add coconut milk & oil, mix until smooth.
- Ladle onto hot griddle, add berries.
- Flip after 2-3 minutes and allow to cook another 2-3 minutes.
- Served with syrup or agave, butter & fresh peaches.
