Grandma shares a lot of her delicious recipes with us, we call this one; "Nana's Italian Eggplant"
- Ingredients:
- 1 medium eggplant; sliced thin to 2 cups
- 1 large stalk of celery; diced
- 3 cloves of garlic; minced
- 1 can diced tomatoes
- 1-4oz can V8 juice; (low sodium)
- 1 tbsp Mrs. Dash seasoning; (extra spicy or garlic & herb)
- 1 sprig fresh parsley; finely chopped
- 3 basil leaves; finely chopped
- 1/4 cup parmesan cheese
- Directions:
- Start by sauteing garlic & onion with 2tbs of olive oil in a large skillet.
- Add eggplant, celery, diced tomatoes & V8 juice, allow to cook for 20 minutes.
- Add parsley, basil & Mrs. Dash.
- Cover with water and simmer for additional 10 minutes.
- Finish off with parmesan cheese.
- Mix all ingredients together and serve as a delicious side dish.
- You can easily turn this dish into a meal by adding 2 cups of cooked pasta to it.
