Grilled Fiesta Shrimp

Put these grilled shrimp out as an appetizer at your next gathering & you'll most likely having your guests asking when your next party is going to be. You can also use this recipe as a salad topper. Be creative & have fun with it!

  • Ingredients:
    1. 1.5 lbs of large shrimp, peeled & deveined; completely thawed if frozen
    2. 1 large orange; juiced & zest
    3. 1 medium jalapeno pepper; seeded & minced
    4. 1/4 cup silver/white tequilla 3 large limes; juiced to 2 tsp
    5. sea salt & fresh ground black pepper; pinch of each
  • Directions:
    1. In a medium mixing bowl add shrimp, 1/2 of jalapeno, lime & orange juice and zest, salt & pepper, stir in tequila.
    2. Transfer to a large freezer bag, seal tightly and rub all ingredients together through the bag. 
    3. Place in refrigerator for 20-30 minutes allowing flavors to meld together & marinade.
    4. Pour ingredients into a large bowl, place shrimp on a preheated grill & cook until opaque throughout, flipping only one time.
    5. Transfer to a serving plate, top with remaining jalapeno & squeeze of lime.
    6. Done!
