Garlic, garlic & more garlic, that's how we like to cook! If your taste buds are anything like ours, try these Garlic Mashed Potatoes with your next meal. They're loaded with...you guessed it, garlic!
- Ingredients:
- 6 Cloves Garlic; chopped
- 3 - 4 lbs. redskin potatoes, diced; slightly peeled, leaving small strips of skin in tact
- 1/2 stick unsalted butter
- 1/4 cup light sour cream
- 1/4 cup parmesan cheese
- 1/2 cup milk, whole or reduced fat; we use plain coconut milk by Silk
- sea salt & ground black pepper; pinch of each
- Directions:
- Place garlic & potatoes in a large saucepan & boil until fork goes through center of potatoes.
- Strain potatoes and place them in large mixing bowl, mash with potato masher.
- Add in all remaining ingredients.
- Using an electric hand beater, whip potatoes into a smooth & creamy consistency, adjusting amount of milk accordingly.
- Serve warm.
