We enjoy the simplicity of chili as well as the convenience of delicious leftovers. This White Bean Turkey Chili is a favorite.
- Ingredients:
- 2 lbs ground turkey meat
- 1 medium onion; finely chopped
- vinegar
- 3 cloves garlic; finely minced
- 4 oz green chile peppers; chopped to 1 1/2 cups
- 1 tsp ground cumin
- 1 Tbsp dried oregano
- 1 tsp ground cinnamon
- cayenne pepper; a pinch
- white pepper; to taste
- 1/4 tsp cane sugar; optional
- 3 15oz cans northern beans
- 5 cups reduced sodium chicken broth
- 2 cups reduced fat shredded cheese blend
- 1 Tbsp extra-virgin olive oil
- Directions:
- Using a large soup pot, combine olive oil, garlic, onion & turkey, cook on medium heat until ingredients are lightly browned.
- Add chile peppers, cumin, oregano, cinnamon, cayenne & white pepper.
- Saute & stir for 5-7 minutes. Add two cans of beans and chicken broth, stir.
- Place third can of beans in a food processor or blender & puree.
- Add to pot with shredded cheese, stir completely & allow to simmer for 20-30 minutes.
- Serve warm with roasted garlic on reduced calorie crackers.
