White Bean Turkey Chili

We enjoy the simplicity of chili as well as the convenience of delicious leftovers. This White Bean Turkey Chili is a favorite.

  • Ingredients:
    1. 2 lbs ground turkey meat
    2. 1 medium onion; finely chopped
    3. vinegar
    4. 3 cloves garlic; finely minced
    5. 4 oz green chile peppers; chopped to 1 1/2 cups
    6. 1 tsp ground cumin
    7. 1 Tbsp dried oregano
    8. 1 tsp ground cinnamon
    9. cayenne pepper; a pinch
    10. white pepper; to taste
    11. 1/4 tsp cane sugar; optional
    12. 3 15oz cans northern beans
    13. 5 cups reduced sodium chicken broth
    14. 2 cups reduced fat shredded cheese blend
    15. 1 Tbsp extra-virgin olive oil
  • Directions:
    1. Using a large soup pot, combine olive oil, garlic, onion & turkey, cook on medium heat until ingredients are lightly browned.
    2. Add chile peppers, cumin, oregano, cinnamon, cayenne & white pepper.
    3. Saute & stir for 5-7 minutes. Add two cans of beans and chicken broth, stir.
    4. Place third can of beans in a food processor or blender & puree.
    5. Add to pot with shredded cheese, stir completely & allow to simmer for 20-30 minutes.
    6. Serve warm with roasted garlic on reduced calorie crackers.
