A quick & delicious salad for any dish! Add grilled chicken breast and make a meal out of it!
- Ingredients:
- 2 cups feta cheese; crumbled
- 1/2 cup fresh mint; chopped
- 1 Tbs fresh thyme; chopped
- sea salt; 2 tsp
- fresh black pepper; to taste
- 1 lemon; zest & juiced to 1 Tbs
- 1 seedless cucumber; diced to 4 cups
- 2 cups Kalamata olives; halve slices
- 2 pints grape tomatoes; sliced lengthwise
- 1/3 cup olive oil
- Directions:
- In a large mixing bowl toss feta, mint, thyme, sea salt, black pepper & lemon zest.
- Allow ingredients to set at room temperature for at least 15 minutes (longer if you have the time).
- Toss lemon juice, cucumbers, olives, tomatoes and olive oil.
- Transfer to serving bowls and enjoy!
