This Tuna & Mixed Green Salad Wrap is a great way to take lunch with you whenever you're "On The Go!"
- Ingredients:
- 1 can white albacore tuna; rinsed & drained
- 1 cup mixed salad greens
- 1/2 cup mayonaise, light or regular; we prefer Kraft with olive oil
- 1/2 cup dijonaise
- 1 large lemon; juiced
- 1/2 cup English cucumber; diced
- 2 tsp capers
- sea salt & black pepper; dash of each
- 1/4 cup feta cheese, crumbled; optional
- 1 pkg flavored wraps; we prefer sun dried tomato or spinach
- Directions:
- Using a large bowl, add tuna with mayo, dijonaise, lemon juice, cucumbers, capers, salt & pepper, mix well.
- Place small portion of mixed salad greens on wrap.
- Scoop tuna on wrap, add feta cheese if using it. Fold wrap & serve.
- Makes 4 wraps.
