Portobello Mushroom Sandwich from Wild Vines Restaurant in Anthem, AZ DELICIOUS!
- Ingredients:
- portobello mushrooms; (as many as you'll be serving)
- pesto sauce; (add a pinch of cayenne pepper to spice it up)
- provolone cheese; (1 slice per sandwich)
- Kaiser Roll; (1 for each mushroom)
- 1 cup fresh spinach
- favorite seasoning & spices
- olive oil; for drizzling
- Directions:
- Begin by drizzling olive oil in the gills of your portobello mushrooms.
- Add favorite seasoning, spices, sea salt etc.
- Place mushroom on hot gril, gill side down for 5 minutes.
- Transfer to an oven-proof dish or pie pan, add sauteed red peppers & onions, top with a slice of provolone cheese.
- Place inside a 425 degree pre-heated oven for 5-7 minutes.
- Spread pesto sauce on Kaiser roll, lay down mushroom on roll.
- Top with spinach, close the bun & enjoy!
