Okay, this sounds a little different, perhaps even strange, but trust me....Brett liked it so it must be really good. Avocados contain antioxidants and are rich in proteins and fibers.They also have a healthy fat benefit factor, which makes this is a great healthier alternative to regular chocolate pudding. The bonus is, it's so quick and easy to make both kids and adults will enjoy this creamy dessert, or even as a snack. - Ingredients:
- 1 ripe medium avocado; pitted and chopped
- 1/4 cup raw agave nectar; or raw honey
- 1/4 cup coconut milk; or substitute with almond or soy
- 1 tsp vanilla extract
- 1/4 cup cocoa powder; or can substitute 2 Tbsp. carob powder
- Directions:
- Start by placing the avocado and all other ingredients in blender.
- Blend until completely smooth and creamy.
- Spoon into two dishes and enjoy!
- Everyone has different taste buds, so experiment with the flavor.
- Add more or less agave nectar or you can even add a banana to mix it up.
- Nuts or fruit can be added as well for garnish.
