Chocolate Avocado Pudding

Okay, this sounds a little different, perhaps even strange, but trust me....Brett liked it so it must be really good. Avocados contain antioxidants and are rich in proteins and fibers.They also have a healthy fat benefit factor, which makes this is a great healthier alternative to regular chocolate pudding. The bonus is, it's so quick and easy to make both kids and adults will enjoy this creamy dessert, or even as a snack.   • Ingredients:
    1. 1 ripe medium avocado; pitted and chopped
    2. 1/4 cup raw agave nectar; or raw honey
    3. 1/4 cup coconut milk; or substitute with almond or soy
    4. 1 tsp vanilla extract
    5. 1/4 cup cocoa powder; or can substitute 2 Tbsp. carob powder
  • Directions:
    1. Start by placing the avocado and all other ingredients in blender. 
    2. Blend until completely smooth and creamy.
    3. Spoon into two dishes and enjoy!
    4. Everyone has different taste buds, so experiment with the flavor.
    5. Add more or less agave nectar or you can even add a banana to mix it up.
    6. Nuts or fruit can be added as well for garnish.
