When you find a soup recipe that works, keep it handy. This butternut squash soup has a great flavor & makes a nice compliment to a salad or a sandwich. This is one of the recipes you'll make on a day when time permits & enjoy the leftovers for several days afterwards.

Additional Info

  • Ingredients:
    1. 1 medium butternut squash, cut into strips & shredded with #2 cone on your Kitchen Kutter
    2. 1 medium onion, cut into 1/8 wedges and also shredded with #2 cone on your Kitchen Kutter
    3. 1 tbsp ground cumin
    4. 1 tbsp ground coriander
    5. 3 cups water
    6. 2 chicken or vegetable bouillon cubes
  • Directions: Add all ingredients to your 4qt slow-cooker. Place on stove-top and cook for 30 minutes on medium heat, stirring throughout. Pour ingredients intoyour blender & liquefy. Serve in soup bowls & enjoy!
