Tomato & Cucumber Mint Salad Recipe

A quick & delicious salad for any dish! Add grilled chicken breast and make a meal out of it!

Additional Info

  • Ingredients:
    1. 2 cups feta cheese; crumbled
    2. 1/2 cup fresh mint; chopped
    3. 1 Tbs fresh thyme; chopped
    4. sea salt; 2 tsp
    5. fresh black pepper; to taste
    6. 1 lemon; zest & juiced to 1 Tbs
    7. 1 seedless cucumber; diced to 4 cups
    8. 2 cups Kalamata olives; halve slices
    9. 2 pints grape tomatoes; sliced lengthwise
    10. 1/3 cup olive oil
  • Directions:
    1. In a large mixing bowl toss feta, mint, thyme, sea salt, black pepper & lemon zest.
    2. Allow ingredients to set at room temperature for at least 15 minutes (longer if you have the time).
    3. Toss lemon juice, cucumbers, olives, tomatoes and olive oil.
    4. Transfer to serving bowls and enjoy!
