My favorite part of cooking is being able to take ordinary food & give it extraordinary flavor with a few simple ingredients. This Orange Vinaigrette Dressing does just that. It also makes for a great marinade.

Additional Info

  • Ingredients:
    1. 2 large navel oranges, juiced to 1/2 cup; not from concentrate o.j. is also an option
    2. orange zest; 1 Tbsp
    3. 1 Tbsp rice vinegar
    4. 1 tsp light brown sugar
    5. 1/2 cup canola oil
    6. 1 Tbsp orange marmalade preserves
    7. 1 tsp extra-virgin olive oil
    8. 1/4 tsp white pepper
    9. sea salt & ground black pepper; pinch of each
  • Directions:
    1. Using a medium size mixing bowl whisk orange juice, orange zest, brown sugar & vinegar together.
    2. Add in both oils & continue whisking.
    3. Add salt, pepper & marmalade, whisk again until all ingredients are until well blended.
    4. Transfer to a mason jar, cover & refrigerate until ready to use.
    5. Shake well before using.
    6. Remember that this can be used for a salad dressing as well as a marinade for chicken breasts.
