Portobello Mushroom Sandwich from Wild Vines Restaurant in Anthem, AZ DELICIOUS!

  • Ingredients:
    1. portobello mushrooms; (as many as you'll be serving)
    2. pesto sauce; (add a pinch of cayenne pepper to spice it up)
    3. provolone cheese; (1 slice per sandwich)
    4. Kaiser Roll; (1 for each mushroom)
    5. 1 cup fresh spinach
    6. favorite seasoning & spices
    7. olive oil; for drizzling
  • Directions:
    1. Begin by drizzling olive oil in the gills of your portobello mushrooms.
    2. Add favorite seasoning, spices, sea salt etc.
    3. Place mushroom on hot gril, gill side down for 5 minutes.
    4. Transfer to an oven-proof dish or pie pan, add sauteed red peppers & onions, top with a slice of provolone cheese.
    5. Place inside a 425 degree pre-heated oven for 5-7 minutes.
    6. Spread pesto sauce on Kaiser roll, lay down mushroom on roll.
    7. Top with spinach, close the bun & enjoy!
