This Mushroom Medley Stroganoff is a quick meal to take to work with you. It can also easily be made into a great dinner by adding grilled chicken breasts to it. Try it tonight!

  • Ingredients:
    1. 1 Tbsp extra-virgin olive oil
    2. 1 medium yellow onion; chopped
    3. Sliced baby portobello, shitake & button mushrooms; 1 cup of each
    4. 1 Tbsp pastry flour
    5. 1 can mushroom gravy
    6. 1 cup beef or vegetable stock
    7. 1/2 cup sour cream
    8. 1 Tbsp ground mustard
    9. 1/4 cup chopped parsley
  • Directions:
    1. Heat olive oil in a large skillet, add mushrooms & onions, saute 5-7 minutes or until soft.
    2. Sprinkle in flour and stir into a paste.
    3. Add gravy & stock, stir and simmer for 20 minutes.
    4. Mix together sour cream & mustard together.
    5. Pour into gravy mixture and heat.
    6. Garnish with parsley and serve over your favorite noodles or mashed potatoes.
