Cool off with this guiltless Tropical Fruit Cooler, A sweet ending to any meal!

  • Ingredients:
    1. 1 cup pure cane sugar
    2. 1 cup water
    3. 1 fresh lime; juiced to 2 tsp
    4. 2 cups fresh strawberries; stemmed
    5. 4 kiwifruit;peeled & cubed
    6. 1 large mango; peeled & sliced
  • Directions:
    1. Using a medium saucepan, combine sugar & water and bring to a boil for one minute over medium high heat.
    2. Remove from burner & allow to cool for 45-60 minutes.
    3. Stir in fresh lime juice and set aside.
    4. Place strawberries & mango in a food processor and blend until smooth.
    5. Stir in half of syrup mixture, mix well and pour into 8 square baking dish.
    6. Rinse, clean & wipe processor container.
    7. Add kiwifruit and remaining syrup, blend until smooth
    8. Drizzle kiwifruit mixture over strawberry-mango mixture
    9. Cover & freeze overnight.
